Cilantro is rich in beneficial phytonutrients and antioxidants, especially the flavonoid quercetin. Cilantro is also a good source of dietary fiber and iron, magnesium and manganese.
There have not been many studies done on cilantro, but it is believed to help control blood sugar, lower cholesterol and fight inflammation and free radicals. Free radicals have many causes and are considered the primary cause of premature aging and degenerative diseases.
The antioxidants found in cilantro also help reduce free radical damage from overexposure to the sun's rays. Research shows that daily use of cilantro helps in preventing skin cancer.
